This artichoke spread is rooted in the agricultural tradition of Campidano, one of Sardinia’s most fertile plains, where artichokes have long been a defining crop. For this recipe, only the heart of the Tema artichoke is used—the most delicate and aromatic part—processed carefully to preserve its natural character.

The production follows a straightforward, respectful approach: seasonal harvesting, minimal processing, and a focus on balance rather than intensity. The result is a spread that reflects the generosity of the land, a beautiful, unique "antipasto" that goes perfectly with the Sardinian salty Pane Carasau.

The aroma is clean and vegetal, with soft herbal notes typical of fresh Sardinian artichokes. On the palate, the spread is delicate and well-balanced, offering a naturally creamy mouthfeel without heaviness. The texture is smooth and spreadable, while the finish remains gentle, slightly savory, and harmonious, leaving a clear impression of the raw ingredient.

Ideal as a spread on Pane Carasau, ciabatta, or rustic bread, finished with a drizzle of olive oil and a pinch of salt. It pairs naturally with Pecorino cheese and can be combined with olives for antipasti or simple starters. Best enjoyed in raw preparations, where its subtle character can fully express itself.

The Azienda Agricola Musio Roberto was founded around sixty years ago in Samatzai, near Cagliari, by Mario Musio and is today run by his son Roberto. The family farm extends over approximately 50–60 hectares, in the heart of the Campidano plain.

The estate is specialized in open-field cultivation of legumes, seasonal vegetables, and cereals such as farro and Senatore Cappelli wheat. Alongside fresh produce, part of the harvest is transformed into artisanal products, including spreads, pâtés, preserved vegetables, and traditional pasta.

Roberto Musio maintains a direct relationship with his customers, selling his products weekly at the Cagliari market and participating since 2010 in the Campagna Amica farmers’ markets of the province. This direct exchange has shaped a production philosophy based on seasonality, consistency, and trust - values that define his work more than labels or claims.
