Created by Vulcino in Latium, this barbecue-style sauce is a harmonious fusion of sweetness, spice and umami depth. Cooked grape must provides a rounded natural sweetness, while aromatic mustard seeds contribute a pleasant, measured heat.

The distinctive character comes from black garlic, obtained through a controlled low-temperature fermentation process known as the Maillard reaction. During this transformation, fresh white garlic develops complex aromas reminiscent of caramel, liquorice, dried fruit and mushrooms, giving the sauce a subtle balsamic nuance that pairs beautifully with mustard’s sharpness.

Balanced and expressive, this sauce works equally well as a finishing condiment or as an ingredient, adding depth and structure to both simple and elaborate dishes.

On the palate, the sauce displays rounded sweetness of cooked grape must, unfolding into layered aromas reminiscent of caramel, dried fruit and liquorice, characteristic of aged balsamic-style condiments, yet without pronounced acidity.

As it develops, the gentle umami depth of black garlic emerges, followed by a controlled, aromatic warmth from mustard seeds that provides structure without sharpness. The texture is dense and glossy, lingering softly and harmoniously.

This balanced profile makes it particularly well suited to aged and semi-aged cheeses, grilled or roasted meats, roasted vegetables and fresh bread, while its complexity also allows it to enrich dressings, marinades and sauces without overpowering other ingredients.

Vulcino was born from the vision of Eugénie and Silvio Grigolini, who fell in love with the unspoiled landscape of Canino in northern Latium. Eugénie, a classical musician and sommelier, infused the estate with artistic sensibility and a deep respect for nature. Their 15 ha of organic olive groves thrive on volcanic soils rich in minerals, producing two oils — the monocultivar Saecula (Caninese) and a blend — both characterized by their purity, sustainability, and emotional resonance.
