Crafted exclusively from the Grignano (Grignan) olive, this monovarietal oil exemplifies the strength and elegance of Veneto’s olive heritage. Grown in the cooler foothills of Valpolicella, the cultivar thrives in mineral-rich soils and temperate climates, yielding an aromatic oil with remarkable intensity and structure.

The estate of Luigi Ruffo has combined artisanal tradition with modern precision, resulting in oils that regularly earn top honors in Italy’s most prestigious guides, including Gambero Rosso and Slow Food Italia.

Bright, fresh, and aromatic. Grassy and nutty notes unfold into a vibrant citrus and leafy complexity. The finish is long and harmonious, with elegant balance between bitterness and pungency.

  • Fruitiness: Medium-high, dominated by green grass, artichoke, and almond blossom
  • Bitterness: Pronounced but balanced, giving structure and depth
  • Pungency: Medium-intense, with a lingering peppery sensation and citrus lift

Ideal for drizzling over grilled vegetables, soups, tomato-based dishes, fresh mozzarella, or seafood carpaccio. Enhances even simple dishes like bruschetta or steamed greens.

Founded in 2012, Luigi Ruffo’s estate is dedicated to preserving and promoting the native olive cultivars of Valpolicella, particularly Favarol and Grignano.

Located in Cellore di Illasi (Verona) on the slopes of Monte Garzòn, the farm benefits from a unique microclimate and highly calcareous soils — conditions that allow the Grignano variety to reach its finest expression.

Over time, the estate has carefully expanded its groves, selecting parcels with exceptional attention to soil type and varietal adaptability:

  • In Colognola ai Colli, volcanic soils nurture Leccino, known for aromas of wild herbs, flint, and smoky undertones.
  • From Montorio, one of the region’s oldest olive-growing zones, comes the Valpolicella DOP, an exceptionally balanced oil sourced from trees more than 500 years old.

Since its debut in 2023, Grignano was awarded the Three Leaves (Tre Foglie) by Gambero Rosso, while Valpolicella DOP earned the same top recognition in 2024 — a testament to Luigi Ruffo’s excellence and his deep respect for heritage and terroir.

Harvesting takes place in mid-October, when olives reach perfect ripeness. Hand-picked Grignano olives are immediately cold-pressed within a few hours of collection. The oil is extracted mechanically under controlled temperatures to preserve aromatic complexity. It is unfiltered, stored in stainless steel tanks, and bottled in small batches to maintain freshness and integrity.
