Sulla honey represents one of the island’s most elegant expressions of Sardinia’s beekeeping heritage. Sourced from Hedysarum coronarium, a leguminous plant traditionally used as fodder and native to Mediterranean pastures, this honey is collected in the area near Brabaraxinu (municipality of Villanovafranca, ~325 m above sea level).

Its subtle aroma and balanced flavor embody the purity of its environment. In its liquid state, the honey is nearly colorless to pale straw-yellow; once crystallized, it becomes white to beige with compact, fine- to medium-grain crystals. The flavor profile is deliberately gentle, offering hints of hay, dried grass, and green legumes, with a soft sweetness balanced by light acidity.

Elegant and understated. Floral, herbal, and hay-like notes blend with a mild sweetness and gentle acidity, creating a harmonious, balanced taste with a clean finish.

Pairing:

Perfect with fresh ricotta, herbal teas, white bread, mild goat cheese, and fruit-based desserts. Also ideal for sweetening yogurt or drizzling over baked pears.

We first met Daniele Cossu in spring 2024, after he came highly recommended by our friends at Lolla Sardegna. Rafaela described Daniele as one of the most passionate beekeepers she had ever met — someone who is consistently recognized at Italy’s most prestigious honey competition, Tre Gocce d’Oro.

Speaking with Daniele feels like being in the presence of a true honey whisperer. Never before had we learned so many details about beekeeping, the production process, the different honeys, and what sets each one apart. Daniele comes across as someone who has devoted his life to one ultimate goal: producing some of the finest Sardinian honeys.

While it was Daniele’s celebrated Corbezzolo honey that first drew us in, we must point out that every other variety we tasted was equally intense and had a fabulous texture.

Daniele’s organic honeys range from the much-praised Corbezzolo to Asphodel, Chestnut, Mediterranean Maquis, Fennel, Thistle, Cistus, and more — all gathered in and around the pristine Sardinian hills of Simaxis and Nuoro, a region of the world known for its exceptional longevity.

Awarded Three Drops Gold, the highest national recognition for Italian honey quality. In 2024, only 17 honeys out of over 1,200 submissions received this distinction — among them Arbaree’s Sulla Honey (Asudda) and Thistle Honey (Cardu).


The Tre Gocce d’Oro – Grandi Mieli d’Italia (“Three Golden Drops”) is Italy’s most prestigious honey competition, organized annually by the Osservatorio Nazionale Miele since 1980. Each year, expert panels perform blind tastings to assess purity, botanical accuracy, and sensory excellence across hundreds of Italian honeys.
