An organic monofloral honey from the nectar of chestnut trees (Castanea sativa) growing in the rugged and mountainous landscapes of Sardinia. Crafted by Daniele Cossu's Arbaree in the Simaxis–Oristano area, this honey has a dark amber color, a complex, earthy aroma, and a distinctly bitter yet balanced flavor, enriched with woody and spicy undertones.

The Chestnut Honey (Frores di Castagno) originates mainly from the slopes of the Gennargentu Mountains, where Sardinia’s chestnut forests thrive. Unlike honeys from other regions, this variety is predominantly nectar-based, resulting in a higher natural moisture content, more intense aroma, and stronger, more persistent taste.

Its sensory character is influenced by the type of chestnut tree, the microclimate, and even the weather during flowering. In dry summers, bees focus mainly on chestnut blossoms, producing honey that is more robust and aromatic, with marked tannic and spicy nuances.

Full-bodied and structured, with woody, tannic, and spicy notes wrapped in a delicate earthy sweetness. Its evolution reveals balsamic and herbal undertones, leading to a long, pleasantly bitter finish that captures the depth of Sardinia’s mountain forests.

Pairing:

Excellent with aged cheeses, roasted meats, or grilled vegetables. Perfect drizzled over nuts, whole-grain bread, or fresh ricotta.

We first met Daniele Cossu in spring 2024, after he came highly recommended by our friends at Lolla Sardegna. Rafaela described Daniele as one of the most passionate beekeepers she had ever met — someone who is consistently recognized at Italy’s most prestigious honey competition, Tre Gocce d’Oro.

Speaking with Daniele feels like being in the presence of a true honey whisperer. Never before had we learned so many details about beekeeping, the production process, the different honeys, and what sets each one apart. Daniele comes across as someone who has devoted his life to one ultimate goal: producing some of the finest Sardinian honeys.

While it was Daniele’s celebrated Corbezzolo honey that first drew us in, we must point out that every other variety we tasted was equally intense and had a fabulous texture.

Daniele’s organic honeys range from the much-praised Corbezzolo to Asphodel, Chestnut, Mediterranean Maquis, Fennel, Thistle, Cistus, and more — all gathered in and around the pristine Sardinian hills of Simaxis and Nuoro, a region of the world known for its exceptional longevity.
