Variety: Senatore Cappelli

Type: Tagliatelle

Tagliatelle Nero di Seppia by Roberto Musio are crafted in Sardinia using only four ingredients: Senatore Cappelli durum wheat semolina, cuttlefish ink, water, and salt. Their striking black colour, firm texture, and subtle marine aroma make them ideal for seafood sauces — or simply served with olive oil and a touch of lemon.

Tagliatelle Nero di Seppia are rooted in the coastal culinary traditions of Italy. Their distinctive black colour and savoury marine notes come from adding cuttlefish ink to the dough, creating a pasta that pairs beautifully with seafood, shellfish, and citrus-forward sauces.

At the Azienda Agricola Musio Roberto, these tagliatelle are produced following traditional Sardinian methods. The farm was founded around sixty years ago in Samatzai, in the province of Cagliari, by Mario Musio, who later passed the business on to his son Roberto — today a skilled farmer and pasta maker. The estate spans about 50 hectares, located thirty kilometres from Cagliari, and specialises in legumes, seasonal vegetables, and grains including einkorn, spelt, and Senatore Cappelli wheat.

Roberto is known for his artisanal pastas made with heritage grains, including rye and spelt varieties, as well as his cuttlefish-ink pasta and his exceptional artichoke-based products — notably his highly praised artichoke cream.

The historic wheat Senatore Cappelli, developed by agronomist Nazareno Strampelli in the early 20th century and named after Senator Raffaele Cappelli, grows tall with deep roots and thrives in dry, nutrient-poor soils. Its long awned ears and aromatic profile make it ideal for traditional, low-input agriculture, though its cultivation can be challenging and yields are lower than modern wheat varieties.

The Azienda Agricola Musio Roberto was founded around sixty years ago in Samatzai, in the province of Cagliari. Today, Roberto continues the family’s agricultural tradition on approximately 50 hectares of land, located about thirty kilometres north of Cagliari.

The farm specialises in legumes, seasonal vegetables, and heritage grains such as Senatore Cappelli wheat and spelt. Roberto is also known for his rye-based and cuttlefish-ink pastas, his wheat cultivation, and his artisanal approach to processing.
