Named after the Gunneddas, the ancient stone huts found throughout northeastern Sardinia, this pasta reflects the island’s deep rural heritage. Produced by the Accalai family in Tuili, these Gunneddas are made exclusively from Senatore Cappelli, a historical durum wheat known for its aromatic profile and strong connection to Sardinian agriculture.

The milling process preserves the natural qualities of the grain, resulting in pasta that carries visible signs of its authenticity: delicate white speckles from dried semolina and tiny darker flecks from the wheat’s inner layers — both natural characteristics of traditional processing.

Selet shapes the Gunneddas using bronze dies, which give the pasta a slightly rough, porous surface ideal for capturing sauces. After shaping, the pasta is placed in wooden frames and dried at a maximum of 38 °C for around two days, a gentle method that protects the wheat’s flavor, nutrients, and natural aroma.

The village of Tuili, nestled in the rolling landscapes of the Marmilla, lies near emblematic Sardinian landmarks such as the Giara di Gesturi plateau and the UNESCO-listed Su Nuraxi di Barumini. The region’s winds, soils, and agricultural traditions shape the cultivation of Senatore Cappelli wheat, which thrives in dry conditions thanks to its deep roots and natural resilience.

Senatore Cappelli itself is a historic variety developed in the early 20th century by agronomist Nazareno Strampelli, named after Senator Raffaele Cappelli. Tall, aromatic, and naturally suited for low-input cultivation, it remains at the center of efforts by the Consorzio Sardo Grano Cappelli, which coordinates quality standards and fosters transparency from field to finished pasta.

In the heart of Sardinia — the island celebrated for its longevity and culinary heritage — Selet has become a reference point for pasta crafted with a deep respect for taste, quality, and tradition.

The story begins with Santino Accalai, the visionary at the head of the family. In the 1990s, he played a decisive role in bringing Grano Senatore Cappelli, a nearly forgotten heritage durum wheat variety, back into the spotlight. Esteemed decades ago for its exceptional aroma and character, this wheat was once a cornerstone of Sardinian agriculture. Santino’s dedication helped restore its place in the region’s fields and kitchens.

For more than 30 years, Selet has cultivated this remarkable grain. The company is also a founding member of the Consorzio Grano Cappelli Sardegna, established in 2014 by local farmers and processors in Tuili with the goal of preserving and promoting this historic wheat variety.

Today, the Accalai family runs Selet together, combining craftsmanship with an unwavering respect for the land. Their flour and pasta are produced exclusively from regional cultivation in the Campidano, Sardinia’s traditional grain valley. Every step — from sowing to milling to shaping the pasta — reflects their commitment to authenticity, sustainability, and the cultural roots of Sardinian food.
