Variety: Senatore Cappelli

Type: Paccheri

Paccheri by Selet are large, bold pasta tubes crafted in Tuili from 100% Senatore Cappelli durum wheat, a heritage grain prized for its aromatic depth. Traditionally associated with Campania, these wide, smooth tubes are ideal for hearty sauces or stuffing, while Selet’s slow drying and bronze-die shaping give them a rustic, sauce-gripping texture.

Paccheri is a classic pasta shape from Campania in southern Italy, especially from Naples. The name comes from the Neapolitan word “paccharia”, meaning “slap” — a playful reference to the sound the large tubes make when they hit the plate. Traditionally made from semolina and water, Paccheri are celebrated for their versatility: they pair beautifully with robust meat sauces, rich tomato preparations, or can be served stuffed and baked.

At Selet, Paccheri are crafted using the historic durum wheat Senatore Cappelli, known for its intense aroma and deep roots in Sardinian agricultural heritage. The wheat is gently milled to preserve its natural characteristics, resulting in pasta with the authentic visual hallmarks of artisanal production: fine white semolina flecks and tiny darker specks from the core of the grain.

Shaped using bronze dies, the pasta develops a lightly porous surface that holds sauces exceptionally well. After shaping, the tubes are arranged in wooden frames and slow-dried at temperatures not exceeding 38 °C for around two days, preserving the flavor, nutrients, and structure of the wheat.

The Senatore Cappelli variety, created in the early 20th century by agronomist Nazareno Strampelli and named after Senator Raffaele Cappelli, is admired for its height, deep root system, and suitability for dry Mediterranean climates. Although more challenging to cultivate and yielding less than modern varieties, it remains appreciated for its authentic taste and aromatic intensity.

In the heart of Sardinia — the island celebrated for its longevity and culinary heritage — Selet has become a reference point for pasta crafted with a deep respect for taste, quality, and tradition.

The story begins with Santino Accalai, the visionary at the head of the family. In the 1990s, he played a decisive role in bringing Grano Senatore Cappelli, a nearly forgotten heritage durum wheat variety, back into the spotlight. Esteemed decades ago for its exceptional aroma and character, this wheat was once a cornerstone of Sardinian agriculture. Santino’s dedication helped restore its place in the region’s fields and kitchens.

For more than 30 years, Selet has cultivated this remarkable grain. The company is also a founding member of the Consorzio Grano Cappelli Sardegna, established in 2014 by local farmers and processors in Tuili with the goal of preserving and promoting this historic wheat variety.

Today, the Accalai family runs Selet together, combining craftsmanship with an unwavering respect for the land. Their flour and pasta are produced exclusively from regional cultivation in the Campidano, Sardinia’s traditional grain valley. Every step — from sowing to milling to shaping the pasta — reflects their commitment to authenticity, sustainability, and the cultural roots of Sardinian food.
