Selenio is a pure Italian variety, officially registered in the National Variety Register since 1987. Its varietal integrity is monitored and preserved by the Ente Nazionale Risi, guaranteeing authenticity, quality and consistency across all certified cultivation.

It is known for:

  • small, pearl-like round grains
  • natural stickiness when cooked
  • high starch content
  • an exceptionally creamy, cohesive texture
  • clean, mild flavour

These traits make it one of Italy’s most reliable short-grain rices for both sweet and savoury applications.

The Campidano plain — with its mineral-rich soils, abundant sunlight and favourable microclimate — offers ideal growing conditions. Although Sardinia is less known for rice, it is in fact Italy’s fourth-largest rice-producing region and recognised for the purity of its seed stock.

Su Mori cultivates its rice using traditional field practices, combined with thoughtful modern milling methods that preserve starch quality and grain integrity.

The story of Su Mori began long before the company’s founding in 2018. The three founders grew up together in the cereal fields of San Gavino Monreale, surrounded by wheat, rice and barley — the very crops they now cultivate. Their childhood connection to the land later inspired the creation of an artisanal mill, dedicated to the grains traditionally grown in this part of Sardinia.

Su Mori means “the path” in Campidanese Sardinian — a tribute to the small dirt roads of their youth and the journey that brought them back to agriculture. Their approach blends agricultural heritage with careful innovation, resulting in cereals that reflect the authenticity of their landscape.

Selenio rice embodies this philosophy: pure, expressive, and crafted with deep respect for tradition and territory.
