Arpago is a pure Primitivo that expresses the warmth and character of southern Puglia with depth and balance. Combining ripe dark fruit with a subtle oak influence that we found to be the signature of I Pastini, it offers structure, smoothness and an elegant, persistent finish.

With Arpago, I Pastini presents a refined interpretation of Primitivo, this historic variety, the most widely know grape variety in Puglia.

The vineyards are located in the southern part of the Valle d’Itria, in the territory of Martina Franca, where Mediterranean climate and limestone-rich soils contribute to aromatic depth and structure.

What impressed us most about this wine was not power, but texture. Unlike many oak-aged Primitivos that emphasize sweetness, vanilla or coconut notes, Arpago expresses a remarkably smooth and gentle mouthfeel. The oak influence remains subtle and restrained, contributing delicate smoky and aromatic wood nuances rather than dominant sweetness.

The result is a Primitivo of balance and composure — structured yet refined, intense yet elegant.

Arpago shows an intense ruby red colour and violet reflections. The nose opens with ripe cherry, plum and blackcurrant, layered with red berries, light spice and hints of dried herbs. Subtle notes of tobacco and light leather add depth and character. On the palate, it is smooth yet structured, combining warm fruit richness with balanced acidity and polished tannins. The finish is persistent, marked by red fruit and a gentle echo of tobacco and oak, creating a harmonious and elegant impression.

Pairing: Ideal with aged cured meats, rich pasta dishes with meat sauces, grilled red meats, light game and mature cheeses.

The winery I Pastini takes its name from the Latin word pastinum, referring to the ancient agricultural practice of shaping the soil to retain rainwater — a vital skill in the dry landscape of Puglia. This concept perfectly reflects the estate’s philosophy: a deep respect for tradition, land, and the patient work required to cultivate vines in the Valle d’Itria.

Family-run and managed by the Carparelli family, the estate farms approximately 18 hectares of vineyards in the heart of the Valle d’Itria. From the very beginning, I Pastini has focused exclusively on indigenous grape varieties, with the aim of preserving and enhancing the region’s viticultural heritage. White varieties such as Verdeca, Bianco d’Alessano and Minutolo, alongside red grapes like Susumaniello and Primitivo, form the core of their production.

Viticulture at I Pastini follows a philosophy of quality and environmental respect. The vineyards are treated only with organic products and enriched through green manure using leguminous plants. Harvesting is carried out by hand in the early morning hours, with careful grape selection to preserve freshness and integrity. In the cellar, traditional knowledge is combined with modern oenological techniques, allowing each wine to express varietal character and terroir with clarity and precision.

We discovered I Pastini in the summer of 2024 during a private tasting near Alberobello, where we had the opportunity to meet Gianni, the owner and driving force behind the winery. What struck us immediately was the estate’s thoughtful and authentic interpretation of Puglia’s native grapes — wines that are expressive, balanced and deeply rooted in their origin. Among them, Susumaniello, Minutolo and their sparkling wines stood out as a powerful yet refined expression, confirming I Pastini as a benchmark producer for indigenous varieties in southern Italy.

For us, every wine tasting is a sensual experience. Proper storage therefore plays a crucial role in preserving quality.

All wines in our selection at Tresmundi are kept in a specially designed wine cellar in Hamburg, maintained with controlled temperature, humidity, and sound insulation.

Bottles are stored horizontally and away from light sources, ensuring the cork remains in contact with the wine to prevent unwanted oxidation. This careful process allows each wine to develop beautifully and reach you in perfect condition.

📦 Delivery

Our wines are shipped in certified DHL packaging designed specifically for safe wine transport (for wine orders only). If your order includes other products, we wrap each bottle securely in bubble wrap to minimize the risk of breakage.
