Story behind the bottle · 1759
When most people think of Italian sparkling wine, they naturally picture Franciacorta, Trento DOC or Prosecco, while very few would imagine that one of Puglia's oldest native grape varieties could produce a Metodo Classico of this calibre: exactly what made 1759 such a remarkable discovery to us.
Our journey with I Pàstini began during our very first visit to Puglia in 2025. While staying in Alberobello, our host recommended a winery that, in his opinion, represented the authentic traditions of the Valle d'Itria better than any other. Curious, we arranged a spontaneous visit.
By then, we had already become fascinated by Puglia's indigenous grape varieties. After enjoying a beautiful glass of Fiano with fresh fish on the Salento coast, we started reading about another almost forgotten variety: Minutolo, a grape variety that seemed to be strongly linked to Gianni, the owner of the Pastini winery
At I Pàstini we slowly tasted our way through the entire portfolio, discovering not only remarkable wines but also a philosophy centred on preserving the region's viticultural heritage. Although Gianni himself only had a few minutes to speak with us, those moments were enough to begin a partnership that continues today.
Rather than trying to imitate Champagne, 1759 proudly expresses its own identity. Verdeca remains the protagonist, while four years on the lees gently add complexity without diminishing the grape's freshness, minerality and Mediterranean character.
It is one of those wines that quietly changes your expectations of what Puglia is capable of producing.
Notes in the glass
Brilliant straw yellow with a fine, elegant and persistent mousse.
The nose opens with delicate aromas of white flowers and pear, followed by fresh citrus notes of lemon and candied citron. Gentle Mediterranean herbs and subtle balsamic nuances recall the landscapes of the Valle d'Itria, while the extended lees ageing contributes refined notes of bread crust, vanilla, dried nuts and delicate pastry cream.
On the palate, the wine is beautifully balanced between freshness and creaminess. The mousse is refined rather than aggressive, carrying vibrant citrus fruit and a pronounced mineral backbone across the palate.
Unlike many long-aged Metodo Classico wines, the lees never dominate. Instead, they support Verdeca's naturally fresh personality, preserving its floral elegance and lively acidity.
The finish is long, savoury and exceptionally clean, ending with Verdeca's characteristic gentle almond-like bitterness that invites another sip.

About the winery · I Pastini
The winery I Pastini takes its name from the Latin word pastinum, referring to the ancient agricultural practice of shaping the soil to retain rainwater — a vital skill in the dry landscape of Puglia. This concept perfectly reflects the estate’s philosophy: a deep respect for tradition, land, and the patient work required to cultivate vines in the Valle d’Itria.
Family-run and managed by the Carparelli family, the estate farms approximately 18 hectares of vineyards in the heart of the Valle d’Itria. From the very beginning, I Pastini has focused exclusively on indigenous grape varieties, with the aim of preserving and enhancing the region’s viticultural heritage. White varieties such as Verdeca, Bianco d’Alessano and Minutolo, alongside red grapes like Susumaniello and Primitivo, form the core of their production.
Viticulture at I Pastini follows a philosophy of quality and environmental respect. The vineyards are treated only with organic products and enriched through green manure using leguminous plants. Harvesting is carried out by hand in the early morning hours, with careful grape selection to preserve freshness and integrity. In the cellar, traditional knowledge is combined with modern oenological techniques, allowing each wine to express varietal character and terroir with clarity and precision.
We discovered I Pastini in the summer of 2025 during a private tasting near Alberobello, where we had the opportunity to meet Gianni, the owner and driving force behind the winery. What struck us immediately was the estate’s thoughtful and authentic interpretation of Puglia’s native grapes wines

Following gentle pressing, the base wine undergoes its second fermentation directly in the bottle according to the traditional Metodo Classico. The wine then rests on its lees for 48 months, developing remarkable finesse, creamy texture and aromatic complexity before disgorgement and final bottling. Rather than allowing autolytic aromas to dominate, the long maturation integrates naturally with Verdeca's vibrant acidity and mineral character. |

For us, every wine tasting is a sensual experience. Proper storage therefore plays a crucial role in preserving quality.
All wines in our selection at Tresmundi are kept in a specially designed wine cellar in Hamburg, maintained with controlled temperature, humidity, and sound insulation.
Bottles are stored horizontally and away from light sources, ensuring the cork remains in contact with the wine to prevent unwanted oxidation. This careful process allows each wine to develop beautifully and reach you in perfect condition.

Our wines are shipped in certified DHL packaging designed specifically for safe wine transport (for wine orders only). If your order includes other products, we wrap each bottle securely in bubble wrap to minimize the risk of breakage.
