The name Verso Sud refers to the southern exposure of the vineyards from which this wine originates, located in the southernmost part of the Valle d’Itria, near the Torre Guaceto natural reserve. Here, Susumaniello, one of the most important native varieties of the Brindisi area, finds ideal conditions to express both strength and elegance.

Produced by I Pastini, a family-run estate devoted exclusively to indigenous grapes, this wine reflects a philosophy that blends traditional viticulture with modern oenology. The result is a Susumaniello that moves beyond rustic expression, offering depth, harmony and a refined interpretation of southern Puglia.

We discovered I Pastini in the summer of 2024, following a recommendation near Alberobello. During an intimate, private tasting at the estate, we had the opportunity to meet Gianni, the owner and driving force behind these wines. What immediately stood out was the estate’s precise and thoughtful interpretation of Puglia’s native grape varieties.

Among them, Susumaniello left a lasting impression: deep, structured and remarkably balanced, far beyond our expectations for the variety.

When returning to Puglia months later, Verso Sud was the first bottle we opened again. Experiencing a different vintage confirmed what we had felt from the start — the same depth, structure and identity carried consistently through time. It was at that moment that the decision became inevitable: this was a wine we wanted to bring and share.

Verso Sud presents in the glass with an intense, brilliant ruby red colour and violet reflections. The nose unfolds with ripe plum, blackberry and cherry, layered with sweet toasted notes, vanilla, chocolate, tobacco leaves and a gentle spice nuance. On the palate, it is harmonious, fresh and fruit-driven, supported by a well-defined structure, soft tannins and impressive length. The oak contributes roundness and depth without overpowering the varietal character, resulting in a wine of intensity and elegance that invites slow, thoughtful enjoyment.

Pairing: Ideal with rich pasta dishes such as lasagna or ragù, grilled meats, and aged cheeses.

The winery I Pastini takes its name from the Latin word pastinum, referring to the ancient agricultural practice of shaping the soil to retain rainwater — a vital skill in the dry landscape of Puglia. This concept perfectly reflects the estate’s philosophy: a deep respect for tradition, land, and the patient work required to cultivate vines in the Valle d’Itria.

Family-run and managed by the Carparelli family, the estate farms approximately 18 hectares of vineyards in the heart of the Valle d’Itria. From the very beginning, I Pastini has focused exclusively on indigenous grape varieties, with the aim of preserving and enhancing the region’s viticultural heritage. White varieties such as Verdeca, Bianco d’Alessano and Minutolo, alongside red grapes like Susumaniello and Primitivo, form the core of their production.

Viticulture at I Pastini follows a philosophy of quality and environmental respect. The vineyards are treated only with organic products and enriched through green manure using leguminous plants. Harvesting is carried out by hand in the early morning hours, with careful grape selection to preserve freshness and integrity. In the cellar, traditional knowledge is combined with modern oenological techniques, allowing each wine to express varietal character and terroir with clarity and precision.

We discovered I Pastini in the summer of 2024 during a private tasting near Alberobello, where we had the opportunity to meet Gianni, the owner and driving force behind the winery. What struck us immediately was the estate’s thoughtful and authentic interpretation of Puglia’s native grapes — wines that are expressive, balanced and deeply rooted in their origin. Among them, Susumaniello, Minutolo and their sparkling wines stood out as a powerful yet refined expression, confirming I Pastini as a benchmark producer for indigenous varieties in southern Italy.

Production method

Harvest takes place in the early morning hours, with grapes picked by hand and carefully selected to preserve integrity and freshness. After gentle processing, fermentation occurs at controlled temperature to extract colour and aromatic complexity while maintaining balance.

The wine matures initially for around ten months in stainless steel, preserving varietal clarity, followed by approximately six months in French oak barrels. This ageing phase enhances structure and softness while respecting the grape’s naturally fine tannins. The wine is then refined in bottle before release.

🍇 Selection

At Tresmundi, every wine is chosen with the utmost care – guided by the expertise of a certified wine professional with WSET Level 2. With deep knowledge of viticulture, winemaking, and tasting, we ensure that every bottle in our collection meets the highest standards of quality, balance, and character.

We focus on wines that tell a story – whether it’s a hidden gem from a small family estate or a timeless classic from a renowned region. What we offer is more than a drink: it’s an experience.

Food and wine are two of our greatest passions. They are among the richest and most rewarding pleasures in life – and we indulge in them as often as possible. When selecting our producers, we consider not only taste, appearance, or awards, but also their values, traditions, and sense of place. Above all, we value passion and respect for nature and craftsmanship. We make sure that each producer’s philosophy and vision are reflected in every drop.

Our focus lies on small, family-run wineries that work with dedication and heart. Every wine has a story worth telling. You won’t find these bottles in supermarkets – nor in the vast catalogs of large online retailers. Our wines, and the stories they tell, are meant to be discovered and appreciated.

🏡 Storage

For us, every wine tasting is a sensual experience. Proper storage therefore plays a crucial role in preserving quality.

All wines in our selection at Tresmundi are kept in a specially designed wine cellar in Hamburg, maintained with controlled temperature, humidity, and sound insulation.

Bottles are stored horizontally and away from light sources, ensuring the cork remains in contact with the wine to prevent unwanted oxidation. This careful process allows each wine to develop beautifully and reach you in perfect condition.

📦 Delivery

Our wines are shipped in certified DHL packaging designed specifically for safe wine transport (for wine orders only). If your order includes other products, we wrap each bottle securely in bubble wrap to minimize the risk of breakage.
