Amarone is the symbolic wine of Valpolicella, and Corte Saibante produces it with full respect for the region’s heritage. The grapes are grown in San Pietro in Cariano and Sant’Ambrogio, historical villages known for producing long-ageing Amarone thanks to their clay-rich soils, hillside ventilation and old vines.

The estate uses traditional techniques — extended drying, long maceration, large oak aging — combined with modern cellar control to craft a wine that is both opulent and precise. Amarone here is not merely powerful; it is a patient wine, shaped by time.

Intense ruby red with hints of garnet from prolonged aging.

The wine opens with a rich fragrance of dried fruits, fig, plum, raisin, and candied cherry. Notes of cocoa, sweet spices, balsamic herbs and a touch of liqueur-like warmth follow.

On the palate it is full-bodied, smooth, warm and dry, unfolding with deep black fruit, dried cherries, and gentle bittersweet cocoa. The tannins are velvety yet firm, and the finish is long, persistent and enveloping.

Pairing: Exceptional with stewed meats, wild game, aged cheeses, or as a meditative after-dinner wine.

Production method

The grapes are harvested manually, selecting only the finest bunches before they begin their slow drying process. In the fruttaio, they rest for more than one hundred days, losing around forty-five percent of their weight and concentrating their sugars. Pressing takes place between December and January, followed by fermentation in stainless-steel tanks using the Ganimede system at controlled temperatures of 16–18 °C.

The wine then undergoes a long maceration of thirty to forty days with regular délestages and gentle bâtonnage. Malolactic fermentation takes place in 20-hl durmast barrels, after which the Amarone begins its extended maturation: twenty-four months in 500–1000-L Allier durmast barrels, a further twelve months in 20-hl casks, and finally twelve months of bottle refinement.

The result is a full-bodied, structured wine with significant ageing potential.

For us, every wine tasting is a sensual experience. Proper storage therefore plays a crucial role in preserving quality.

All wines in our selection at Tresmundi are kept in a specially designed wine cellar in Hamburg, maintained with controlled temperature, humidity, and sound insulation.

Bottles are stored horizontally and away from light sources, ensuring the cork remains in contact with the wine to prevent unwanted oxidation. This careful process allows each wine to develop beautifully and reach you in perfect condition.
