Corte Saibante produces its Ripasso in the heart of Valpolicella Classica, an area known for deep-cut valleys, hillside terraces, and soils derived from limestone and volcanic substrates. The grapes grow on well-drained hillsides traditionally cultivated with pergola and guyot systems.
The Ripasso method enriches the wine by refermenting it on partially dried Amarone or Recioto pomace, adding structure, body, and complexity.
Notes in the glass
Deep ruby red with subtle garnet shades; clear and concentrated. The wine opens with red cherry, dried plum, and blackberry, followed by gentle hints of cocoa, sweet spice, and dried herbs. The palate is rounded and velvety, offering ripe forest fruit, light balsamic tones, and a fine weave of tannins. The Ripasso method adds warmth, texture, and complexity, carrying into a persistent, lightly spiced finish with echoes of cocoa and Mediterranean herbs.
Pairing: Excellent with roasted red meats, game dishes, aged cheeses, or hearty pasta.

| Production method | After the harvesting there is the immediate pressing with a crusher-destemmer machine. The maceration and fermentation lasts approximately 7/10 days at the controlled temperature (20°/24°C) in inox steel tanks. The grape must is transferred in steel tanks for the completion of the malolactic fermentation. By the end of February there is the refermentation of the Valpolicella Ripasso Classico on the pomace of the Amarone for approximately 8 days at a stable temperature of 15-18°C. |

For us, every wine tasting is a sensual experience. Proper storage therefore plays a crucial role in preserving quality.
All wines in our selection at Tresmundi are kept in a specially designed wine cellar in Hamburg, maintained with controlled temperature, humidity, and sound insulation.
Bottles are stored horizontally and away from light sources, ensuring the cork remains in contact with the wine to prevent unwanted oxidation. This careful process allows each wine to develop beautifully and reach you in perfect condition.

Our wines are shipped in certified DHL packaging designed specifically for safe wine transport (for wine orders only). If your order includes other products, we wrap each bottle securely in bubble wrap to minimize the risk of breakage.
