Roberto’s craftsmanship is especially evident in the perfectly balanced acidity, achieved through the precise use of wine vinegar in carefully measured proportions, enhancing the asparagus’ natural freshness without overpowering its character.

Fresh and vegetal on the nose, with delicate notes of steamed asparagus, light herbal nuances, and a gentle tanginess from the wine vinegar. Subtle spice accents add depth without dominating the natural character of the vegetables.

The sunflower oil contributes a soft, rounded mouthfeel, while the wine vinegar brings a clean and lively acidity that lifts the flavor profile and enhances the natural vegetal notes.

Der landwirtschaftliche Betrieb Azienda Agricola Musio Roberto wurde vor rund sechzig Jahren in Samatzai gegründet. Heute bewirtschaftet Roberto etwa 50 Hektar Land, rund dreißig Kilometer nördlich von Cagliari, und führt die Familientradition fort.

Der Hof ist spezialisiert auf Hülsenfrüchte, Saisongemüse und Getreide wie Senatore Cappelli und Dinkel. Roberto ist bekannt für seine handwerkliche Verarbeitung und seine hochwertigen Produkte – von Nudeln über Getreide bis zu Hülsenfrüchten.
